Officially unveiled in January 2025, YASU Omakase is not about spectacle—it’s about precision, presence, and reverence. This is sushi stripped down to its purest form, where every grain of rice, every cut of fish, and every pause between courses is intentional. An Omakase Rooted in Tradition—and Personal History


Following the success of Sushi Yasu Tanaka, Chef Tanaka’s newest concept represents his most intimate vision yet. Inspired by his roots in Yamanashi, Japan, and the rituals of the country’s most revered sushiyas, YASU Omakase Miami is designed as a direct dialogue between chef and guest.


Seating just eight diners per service, the experience unfolds at a breathtaking 600-year-old hinoki counter, carved from timber traditionally reserved for Japanese temples and shrines. The counter’s natural grain is left untreated and polished daily with rice bran—a centuries-old practice that preserves the wood’s warmth, scent, and vitality.


From the moment guests take their seats, time slows. The outside world fades. What remains is craft.


YASU Omakase Miami: A Culinary Journey, Course by Course

The experience begins with three to five otsumami, showcasing both hot and cold preparations that set the tone for the evening. From there, guests are guided through a meticulously curated progression of nigiri, each piece revealing Chef Tanaka’s mastery of balance, temperature, and restraint.

The omakase concludes with miso soup, a signature temaki hand roll, and a seasonal dessert—each course flowing seamlessly into the next. Nothing is rushed. Nothing is excessive. Every bite tells a story.


Seafood is sourced through exclusive channels, with most fish arriving directly from Toyosu Market in Tokyo, complemented by exceptional Florida coastal species. Niigata rice is adjusted seasonally for optimal texture, while house-seasoned soy sauces are tailored to enhance individual fish profiles rather than overpower them.

A Collaboration Built on Trust and Craft


Chef Tanaka leads the project alongside Chef Raymond Li, a longtime friend and creative partner whose experience at globally celebrated restaurants brings subtle South Florida nuance to the menu. The result is not a replica of Japan, but an evolution—one that honors tradition while allowing Miami’s coastal vibrancy to gently shine through.

At YASU Omakase Miami, the beverage program is as thoughtful as the food. A personally curated sake collection features rare producers and limited bottles, available by the glass or as pairings designed to follow the arc of the omakase experience.


A concise wine list—developed with expert consultation—offers selections chosen specifically to complement the menu’s subtlety and precision. Nothing competes. Everything supports.

A private dining room anchored by a second hinoki counter is set to debut soon, offering an intimate setting for celebrations and special occasions.


Design That Speaks Softly—and Carries Weight


The design of YASU Omakase Miami blends traditional Japanese craftsmanship with Nordic minimalism, resulting in a space that feels serene, noble, and quietly commanding. Nearly every element was handcrafted by Japanese artisans, including intricate kumiko woodworking executed with museum-level precision.


Custom tableware and sake vessels were designed in collaboration with ceramic artists in Chef Tanaka’s hometown of Yamanashi, chosen specifically to complement the weight, texture, and temperature of each course.


Seating comes courtesy of PP Møbler chairs, handcrafted by master Scandinavian furniture makers to ensure comfort throughout the two-hour experience.
