Miami Spice in the Sky: Sugar at EAST Miami

There’s Miami Spice. And then there’s Sugar Miami Spice, served high above Brickell, surrounded by tropical greenery, glittering skyscrapers and the kind of views that make you forget you came here for dinner.

Perched atop EAST Miami, Sugar has long been one of those places that feels quintessentially Miami. You step off the elevator, walk into what feels like a secret garden in the sky, order something dangerously easy to drink and suddenly staying for “just one” becomes a very questionable plan.

For Miami Spice, Sugar is giving us another reason to head upstairs.

The elevated rooftop destination is showcasing the bold, Asian-inspired flavors that have helped define EAST Miami's culinary personality. Think Hamachi Tamarind Tiradito, Brisket Bao Buns, Wagyu, yuzu, lychee and cocktails

developed in EAST Miami’s Bar Lab. Basically, Miami Spice has entered its rooftop era.

Sugar Miami Spice Comes With a View

Miami has never been a city particularly interested in choosing between great food and a great scene.

We would like both, preferably with a skyline and a cocktail.

Sugar understands the assignment.

High above Brickell, the rooftop feels worlds away from the traffic, meetings and general chaos happening below.

Lush greenery creates a tropical hideaway while the surrounding towers remind you that you're still very much in the middle of Miami's financial and lifestyle playground.

As the sun begins to disappear, Brickell starts putting on its nightly show.

The buildings glow.

The temperature drops, slightly because this is still August in Miami, and cocktails begin appearing across the tables.

It's exactly the kind of setting where Miami Spice becomes more than a prix-fixe meal. It becomes a night out.

First Things First: Pick Two Light Bites

Here’s where Sugar immediately makes things interesting: guests begin by choosing two light bites.

And choosing may be harder than expected.

The Tamarind Tiradito pairs hamachi with finger lime and tempura wakame, creating a bright, citrusy start with just enough crunch to keep things interesting.

Then there are the Bangkok Spring Rolls, served with sweet chili sauce. They're crispy, familiar and exactly the sort of thing you order “for the table” before realizing you don't particularly want to share.

The Indonesian Corn Fritters arrive with a house-made orange chili sauce, bringing together sweetness, heat and crunch, while the Wok-Tossed Edamame, finished with garlic and soy, offers a savory classic for anyone attempting to behave before the main course arrives.

Our strategy?

Order with friends. Coordinate selections. Try everything.

Miami Spice is a team sport.

Sugar Miami Spice Gets Serious With the Main Course

Next comes the main event.

Sushi lovers can go for the Sugar Roll, topped with seared salmon, or keep things beautifully simple with the Sashimi Assortment featuring tuna, salmon and hamachi served with ponzu.

For something richer, the Thai Chicken Satay combines fragrant curry spice with Singaporean peanut sauce.

And then we have the Brisket Bao Buns.

Pillowy bao. Rich brisket. Pickled vegetables. Gochujang glaze.

Need we say more?

It's the kind of dish that captures Sugar's culinary personality perfectly: globally inspired, playful and sophisticated without taking itself too seriously.

But perhaps you're thinking, I'm on a rooftop in Brickell. Shouldn't there be Wagyu involved? Sugar agrees.

Guests looking to take their Miami Spice dinner up a notch can upgrade to premium American Wagyu, with selections including Red Curry Wagyu NY Strip or Wagyu Picanha, served with Singapore-style salsa verde and peanut sauce.

Because sometimes “I'll just have something light tonight” simply isn't the energy.

Meet the Yuzu Blossom

And then there's the Yuzu Blossom.

Even the name sounds like something you should be enjoying on a rooftop. Yuzu has become a favorite ingredient in modern Asian-inspired cuisine for good reason. Its citrus character is bright, aromatic and refreshing without feeling predictable. At Sugar, the Yuzu Blossom continues the experience's theme: vibrant flavors that feel perfectly suited to Miami.

It's fresh.

It's playful.

It's probably going to end up on Instagram.

And we're completely fine with that.

This Is Why We Love Miami Spice

The beauty of Miami Spice has always been discovery.

Yes, it's an opportunity to experience some of the city's most exciting restaurants through specially curated menus. But it's also an excuse to revisit places we already love and experience them differently. Sugar falls squarely into that second category.

You may know the rooftop.

You may have watched the sunset here.

You may have ordered cocktails here after dinner and somehow found yourself still sitting under the tropical canopy considerably later than expected.

But Sugar Miami Spice gives you a reason to experience the venue through its food. And that matters because EAST Miami's culinary identity isn't about playing it safe. It's international, creative and distinctly connected to the energy of Brickell; a neighborhood where cultures, business, nightlife and luxury collide every single day.

Come for Miami Spice. Stay for Brickell After Dark.

Of course, dinner at Sugar has one unavoidable side effect. You probably won't want to leave. That's the danger of rooftop restaurants in Miami. Dinner ends, someone orders another cocktail, the skyline gets prettier and suddenly everyone collectively decides tomorrow morning's responsibilities are a problem for tomorrow morning.

Sugar makes that decision particularly easy.

There's something about sitting among tropical greenery while looking out across Miami's glowing skyline that makes the city feel almost cinematic. And maybe that's the real appeal of experiencing Miami Spice at EAST Miami.

The Tamarind Tiradito brings the brightness. The Brisket Bao Buns bring the indulgence. The Yuzu Blossom brings the unexpected. And Sugar brings the view. Together, they create exactly what a Miami Spice dinner should be: delicious, social, a little glamorous and memorable enough that you're already planning who to bring back next time.

Because in Miami, dinner is rarely just dinner.

And at Sugar, it's happening in the sky.
