Jun’s Welcomes Ojina Jeju for a One-Night Culinary Moment

Dubai’s dining scene continues to set the global pace, and on January 26, 2026, it delivers another unforgettable moment. Jun’s, helmed by acclaimed chef Kelvin Cheung, will host a one-night-only culinary collaboration with Ojina Jeju, a deeply respected, family-run Korean dining experience from Jeju Island.

Priced at AED 495 per person and taking place from 6:00 PM, the Jun’s Ojina Jeju collaboration is supported by 1004 Gourmet through its 1004 & Friends initiative, bringing together two parallel philosophies of fermentation, time, and intentional cooking under one roof.

A Meeting of Time and Technique

At its core, this collaboration is about contrast and connection.

Jun’s represents the present. Inside its in-house fermentation lab, the team produces its own koji sambal, soy sauces, and fermented elements that define the restaurant’s bold, third-culture identity. Fermentation and pickling are not just techniques here—they are tools of sustainability, transforming scraps and trims into layers of umami, ensuring nothing goes to waste.

Ojina Jeju represents time. Their approach to fermentation is shaped by patience, repetition, and generational knowledge. Ingredients are aged, pickled, and fermented slowly, allowing flavor to evolve naturally.

When these two philosophies meet, tradition and modernity sit side by side—each speaking clearly, without competing.

This natural alignment makes the Jun’s Ojina Jeju collaboration feel less like a guest chef dinner and more like a thoughtful conversation between kitchens.

Rooted in Place, Seasonality, and Fermentation

The evening’s specially curated menu celebrates Korea’s rich fermentation traditions while embracing Jun’s contemporary lens. Guests can expect standout dishes such as:

  • Jeon bok jatjuk with Jeju pine nut

  • Tongyeong oyster paired with Jun’s signature koji sambal

  • Premium Hanwoo beef, served alongside a refined assortment of traditional pickles

\Seasonal vegetables and carefully balanced accompaniments round out the menu, reflecting both Ojina Jeju’s heritage-driven approach and Jun’s globally influenced, third-culture perspective.

Ojina Jeju’s team will also bring a rare selection of house-prepared ingredients, including long-aged ganjang and doenjang, Ojina kimchi, dried wild mountain vegetables, and freshly pressed sesame and perilla oils—offering guests an intimate look into their family’s culinary legacy.

Why the Jun’s Ojina Jeju Collaboration Matters

In a city known for spectacle, this dinner stands out for its quiet confidence. It honors process over performance and craftsmanship over trends. Fermentation becomes the common language—connecting Jeju Island to Dubai, tradition to innovation, and chefs to guests.

Through this one-night experience, Jun’s, Ojina Jeju, and 1004 Gourmet create more than a dinner. They create a meaningful cultural exchange—one that celebrates respect for ingredients, the passage of time, and the power of gathering around the table.
