
Following the recent rebranding of MIA Market, the elevated food hall formerly known as St. Roch Market has opened up several new concepts amidst the black high-tops and white tile of this chef-driven Miami Design District eatery — including the unassuming Ruby Dee’s.
Chef Daniel Roy of the Generator Miami pays homage to his grandma, a former Marine and all-around badass, at this veg-forward spot. Seasonal dishes focus on quality ingredients and locally sourced produce — giving every component a story to tell on a menu of raw selections, greens and mains that is as fresh as it is delectable.
Globally inspired and masterfully plated, standout dishes both fuse — and infuse — texture with flavor and creativity. Like the Hamachi Tartare with avocado mousse and crispy quinoa; the Butternut Squash Soup layered with pepita crumble and maple whipped cream; the Roasted Romanesco with harissa, celery leaf pesto, spicy crumbs and herbs; and the Soft Cooked Salmon on a bed of corn polenta, tomato salad and dill oil.
And while vegetarians and vegans alike will find comfort in having a robust selection of comfort foods and refreshing plates to choose from, responsibly sourced Faroe Island salmon can be added to any dish for anyone looking to add more protein to their meal.
